This also acts as a great replacement to lasagna! Low calorie and nutrient dense zucchini replaces the carbohydrates of lasagna noodles.
Stuffed Zucchini
- 4 medium zucchini
- 2 lb ground turkey
- 4 roma tomatoes (diced)
- 1 Tbsp. olive oil
- 1 yellow onion (diced)
- 4 cloves garlic (minced)
- 1 tsp. paprika
- 1 tsp. ground cumin
- 1 tsp salt
- ½ tsp pepper
- 2 tbsp cilantro (chopped)
- Preheat the oven to 375 degrees. Slice the zucchini in half lengthwise. Use a spoon to scoop out the soft middle and set aside.
- Heat the olive oil in a large skillet over medium heat. Add onion and garlic and saute for 4-5 minutes. Add ground turkey to the pan and use a spatula to break into smaller pieces. Stir in paprika, cumin, salt, and pepper. Cook until the turkey is done, stirring occasionally. Add diced tomatoes to the pan and cook for 3 more minutes.
- Carefully spoon the beef mixture into the zucchini. Bake for 20-25 minutes, until zucchini is tender.
