These spicy sweet potatoes really kick it up a notch. The combination of coconut oil, cayenne pepper, and paprika provide just the right amount of flavor and kick to keep your taste buds tingling and begging for more. Boiling the sweet potato helps bring out the natural sweetness of the potato, but roasting will also do this. If you prefer a crisper outer layer, I suggest roasting instead of boiling.
Spicy Sweet Potato
- 1 sweet potato (peeled and cubed into 1/2 inch cubes)
- 1 Tbsp coconut oil
- 1 tsp. cayenne pepper
- ¼ tsp black pepper
- Place peeled and cubed sweet potato in a pot with water. Bring to boil and cook until done. Err on the side of cooking to long and being over done as opposed to under done.
- Pour sweet potatoes into a colander to drain the water. Add coconut oil to empty pot and heat over medium-low until melted.
- Place sweet potatoes back into the pot with coconut oil. Add cayenne pepper and black pepper. Toss over low heat until the sweet potatoes are well coated. Remove from pot and serve warm.
