These veggie burgers are filling and easy to make. Not to mention, they’re high in fiber and protein due to the quinoa and black beans! Enjoy quinoa and black bean burger for lunch or dinner, and feed your body a meal that’s great for digestion!
Quinoa and Black Bean Burgers
- 1/2 cup cooked quinoa
- 1 can (15.5 ounces black beans, rinsed and drained)
- 1 tablespoon nutritional yeast
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon extra-virgin olive oil (plus extra used for cooking)
- Preheat oven to 400 degrees
- Combine all ingredients in a medium bowl and use your hands or a fork to mash into a paste-like mixture
- Divide the mixture into four equal sections, and form each section into a patty measuring 1/4-1/2 inch thick
- In an oven safe saucepan over high heat, pour a 1/2 tablespoon extra virgin olive oil and cook each patty for 1 minute on each side
- Transfer the saucepan into the oven and bake for 15 minutes
- Serve burgers on whole grain buns or use a lettuce wrap for a lower carb meal
