This kale sweet potato soup is an easy and delicious way to get lots of good nutrients into your body without even realizing it! Paprika, garlic, and ginger give it a little kick by incorporating a savory flavor. Increase the ingredients to make more servings, which you can eat throughout the week!
Kale Sweet Potato Soup
- 2 medium sweet potatoes
- 4 cups vegetable broth
- 1/2 cup sweet onion
- 2 cups chopped kale
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp dried ginger
- 1 Tbsp extra virgin olive oil
- Salt and pepper to taste
- Preheat your oven to 375 degrees. Microwave sweet potatoes for 10 minutes, then bake in the oven for 20 minutes or until soft. Remove skin from the sweet potatoes.
- Put potatoes, vegetable broth, sweet onion, paprika, salt, pepper, and olive oil in a high speed blender or food processor. Puree until smooth.
- Transfer the puree to a soup pot. Heat the mixture. Add kale and allow the hot soup to wilt the kale leaves. Simmer until ready to serve.
